Considering that you're not likely to load and unload the truck the way it was in service, I would try to talk you out of heavier-gauge steel (it won't get warped like the old one). It'll make it that much harder to work with, you'll have to carry around unnecessary weight, it'll cost more, and it won't be quite correct.

Wood is pretty, but it dings up much easier, it expands and contracts at different rates than steel, it absorbs water which stays in contact with the steel around it, and steel is easier to paint and repair. And depending on the wood used and the modifications necessary to install it, the new bed may weigh considerably more than original-dimension steel.
